Organic Root Vegetable with Spinach Purée…



Small Batch

1/2 organic sweet potato

1 organic carrot

handful of sautéed or steamed organic spinach

4 steamed figs (optional)

Fresh Rosemary (optional)

Olive Oil (optional)

Roast the carrots and the sweet potato ( sprinkle olive oil and rosemary -optional) @ 400 for 20 – 30 minutes or until vegetables are tender

Steam figs for 5 minutes then add the spinach for the last minute or so.

Place all the ingredients into a food processor, nutri-bullet and puree until smooth. Voila!
